Scotland's First Swedish Baker

Scotland's first Swedish baker to open at Quartermile Residents at Edinburgh’s most prestigious property development will wake to the inviting aroma of freshly baked bread when Swedish baker, Peter’s Yard, becomes the first retailer to move into the landmark Quartermile site next month. The first ever Swedish baker to open in Scotland, Peter’s Yard, will be a welcome addition to the new community taking shape at the site of the former Royal Infirmary in the heart of the Capital. The new 1,800 sq ft premises are nestled in one of the striking steel and glass buildings designed by the world-acclaimed architects Foster & Partners combining contemporary architecture with rustic interiors, to provide an intimate escape from everyday life. Open daily, Peter’s Yard will offer Swedish specialities including artisan bread, open sandwiches, ice-cream and marmalade using only the finest locally-sourced produce. The glass-fronted in-store bakery will ensure that customers enjoy freshly baked bread and patisseries straight out the oven. Ideally situated for visitors to the city, residents and those working in the new office buildings at Quartermile, Peter’s Yard will be open 7am to 7pm and for those living and working nearby lunch can be ordered online for delivery. In keeping with Quartermile’s dedication to quality and the highest standards, Peter’s Yard will initially be run by four master bakers from Sweden with a view to recruiting and training people from the local area once the store is established. Spearheading the team is Sweden’s leading master of the baking and patisserie world, Jan Hedh. As award-winning Master Baker with a passion for artisan bread, Jan Hedh brings 35 years worth of experience from the sublime world of chocolate, conserves, pastry and bread. With his considerable expertise and know-how, Jan Hedh is now intent on contributing to a new food culture where bread plays the starring role in this Swedish concept of a café and top class bakery.
